Saccharification system
Saccharification: The so-called saccharification is the use of various hydrolytic enzymes contained in malt to gradually decompose the insoluble high molecular substances in the malt into soluble low molecular substances under suitable conditions. This decomposition process is called saccharification. The whole process includes starch saccharification, protein decomposition, glucan decomposition, acid formation and changes in polyphenols. The main methods of saccharification include boiling saccharification, leaching saccharification, double mash saccharification and multi-stage saccharification.
